Cultures Collide in Chef Ryan Poli's Inaugural Menu at Union Tavern in Downtown Nashville's Arts District

The refreshed restaurant takes diners on a journey through Poli’s unique lens influenced by his culinary experience and travels.

NASHVILLE, Tenn. (March 9, 2022) –Union Tavern will officially open its doors for dinner service on March 16, 2022. Inspired by the ideas of togetherness and connection, Union Taverngathers guests around the table to share in the joy of dining with thoughtful ingredients and libations. Located at Bobby Nashville, the reimagined downtown restaurant is the latest addition in acclaimed chef Ryan Poli’s property-wide revitalization of the hotel’s eateries.

Poli, most recently known for his time as executive chef of Catbird Seat in Nashville after cooking at internationally acclaimed restaurants such as the French Laundry, El Celler de Can Roca and Noma Tokyo, is teaming up with local favorite boutique hotel, Bobby Nashville, to offer a trimmed, du jour bill of fare. The inaugural menu pays homage to not only chef RyanPoli’scareer, but the finesse and refinement he has garnered throughout the many years of his multi-cultural culinary experience. Poli’s commitment to local purveyors and careful sourcing of high-quality ingredients from smaller producers has become instrumental in navigating the post-Covid restaurant industry and will shine brightly throughout the menu.

The four-part opening menu, which will feature seafood, vegetables, grains, meat, and desserts, pullstogetherPoli’s market-driven fare with heavy Mediterranean influences and Asian touches. Notable Nashvillepurveyors alongside other locally sourced vendors will appear throughout the frequently evolving menu in dishes such as:

  • Bear Creek Farm Steak of the Week (Potato Pave, Mushrooms, Red Wine Sauce)
  • Greener Roots Salad (Honey Crisp Apple, Manchego, Almonds, Chardonnay Vinaigrette)

Other menu standouts include:

  • Bluefin Tuna (Yuzo Dressing, Lime Quats, Lime Zest, Shiso)
  • Puttanesco Tagliatelle (IbericoHam, Capers, Fried Breadcrumbs, Olives)
  • Spice Rubbed Pork Ribs (Shaved Cabbage, Radish, Cilantro Puree)
  • Basque Cheesecake (Seasonal Puree)

An elevated wine list and a concise cocktail menu will accompany the adaptive spread, adding a subtle spin to favorite classics. The King’s Day (Gray Whale Gin, St. Germaine, Green Chartreuse, Lime Juice, Orange Bitters) mirrors a classic gin cocktail, offering a sweeter spin on a refreshing drink meant to cleanse the palate between courses while the San Juan (Licor 43, Espresso, Citrus Oil), in response to the popularity of the espresso martini, pays tribute to the Spanish Carajillo with a citrus twist.

Dedicated to seasonality, Poli’s empathic perspective on sourcing food-to-table has led the chef to lean into his relationships with the community and small-batch producers more than ever. As a result, Poli has crafted a passionate and thoughtfully curated addition to Bobby Nashville’s dynamic culinary experience.

In the future, Union Tavern patrons can look forward to chef collaborations following Poli’sand Bobby Hotel’s successful partnership with Black Dynasty Ramen as well as a reinvented brunch menu.

Union Tavern’s dinner service will run Wednesday through Sunday,5 p.m.-10 p.m.with extended bar service until 11 p.m.on Friday and Saturday.
