Premrose set to change the face of Seafood offerings in Nashville

Red Pebbles Hospitality and Fresh Hospitality are excited to announce their new concept in The Gulch neighborhood of Nashville, Pemrose.

Occupying the space formerly housed by Fin & Pearl, Red Pebbles has renovated the restaurant and completed a full re-conceptualization. The kitchen will be led by acclaimed chef and culinary director Matt Bolus, who will remain on as executive chef of the award-winning The 404 Kitchen. Pemrose promises to change the seafood game in land-locked Nashville, with fish brought in daily from around the world to offer the freshest options in the city. Pemrose is open daily for lunch and dinner.

The name Pemrose is inspired by the iconic Shel Silverstein poem, Have Fun, and the concept will be seafood focused with Pacific and Pan-Asian flavor profiles. Leaning on the title and verbiage of the poem, “It’s safe to swim in Pemrose Park/I guarantee there are no sharks,” Pemrose will offer serious food with a focus on fun, exciting ingredients and playful flavors.

The menu is divided into the following sections: On Arrival, Starters, Salads, Sushi and Mains, and the Day Boat section which features the freshest fish options available. Instant classics are sure to be the Tin of Branzino available “On Arrival,” the “Karaage,” a crispy sesame chicken with honey soy, King Crab Legs with tabasco aioli, tobiko, caviar and basil, and the Hawaiian Ribeye with soy, pineapple, ginger, garlic and shisito peppers. The cocktail menu is heavy on classics with interesting twists like the To Hell and Back with Jose Cuervo traditional tequila with triple sec, lime, habanero agave, firewater tincture and black lava salt, and there will be a small and carefully curated sake menu sourced painstakingly from meetings with experts in the category to pair beautifully with specific menu items. Shortly after opening Pemrose will be offering a very special and limited Omakase tasting at the bar, only on Friday and Saturday nights. In the future Chef Bolus plans to introduce Norwegian langoustines and live king crabs, as well as other ambitious and unique seafood offerings.

Lunch leans heavily towards the Rolls, Bowls and Tacos section which features a Lobster Roll, Maine or Connecticut style, a Poke Rice Bowl with tuna or salmon, and either a Bajo fish, steak or chicken taco. Starters, Salads and Sushi will also be available during lunch, as well as the On Arrival selections and mains like a Seafood Bolognese with gamelli pasta, assorted seafood, San Marzano tomatoes, basil and parmesan.

The Pemrose dining room seats 285 with indoor and patio seating, and multiple private dining options are available.

Pemrose opens for dinner on Wednesday, March 20th. Hours will be Monday - Thursday 11AM - 9PM, Friday 11AM - 10PM, Saturday 10:30AM- 10PM and Sunday 10:30AM - 9PM.
