Chef Ryan Poli and Sommelier Matthew Poli to Bring Claymore, a Neighborhood Steakhouse, to Nashville’s Wedgewood-Houston
The 60-seat American steakhouse marks the second concept from the brothers behind iggy's.
NASHVILLE, Tenn. – Ryan and Matthew Poli, the brother duo behind award-winning iggy's, announces Claymore, a neighborhood steakhouse opening at 622 Hamilton Avenue in Wedgewood-Houston. Located just down the hill from iggy's, Claymore continues the brothers' hospitality-first approach, channeling the same devotion to high-quality food, unique wines and top-tier service.
Projected to open in 2027, the 60-seat restaurant is built on the same attention to detail that defines iggy's: carefully sourced ingredients and an inventive enthusiasm from the kitchen backed by a beverage program designed to complement every dish. While prime cuts of meat will be the focal point of the menu, creative salads and elevated steakhouse sides are not to be missed, rounding out a dining experience that is as much about craft as it is about comfort.

The beverage program is designed to match the unapologetically American steakhouse menu. Led by Sommelier Matthew Poli, the wine list is the ace of the bar program, which is focused on bold reds with a mix of old world varietals, producers and new exciting regions and styles. The bar program will also celebrate the art of the classic cocktail with a thoughtful lineup of top-shelf spirits, a robust whiskey list, house-made modifiers and spirit-free offerings.
Matthew Poli added, “Hospitality has always been our focus, and Claymore is a continuation of that spirit. We’re excited to build on that foundation by offering a steakhouse experience we’re both passionate about and love.”

About Chef Ryan Poli
Trained in classic French and American cuisine, Chef Ryan Poli refined his technique at Thomas Keller's The French Laundry and Jean Banchet's Le Francais, and later trained at El Celler de Can Roca and Martín Berasategui in Spain. Early in his career, Poli opened three acclaimed Chicago restaurants — Butter in 2005, Perennial in 2008 and Tavernita in 2012 — and was among a wave of chefs who put the city on the map as a food destination, earning a Bib Gourmand from the Michelin Guide, Travel + Leisure's Best New Chef and Food & Wine's Best Dish, among other honors. Poli went on to work with Dan Barber at Blue Hill at Stone Barns, at Noma in Copenhagen and Japan, at Brae in Australia and alongside Marc Vetri making pasta in Philadelphia. In 2016, he returned to the U.S. to lead Nashville's Catbird Seat, earning Eater's Best Dining Experience each year of his three-year tenure. Since then, Poli has crafted menus and consulted on restaurant projects from Las Vegas to Bali to Austin, run a private dining experience in Nashville booked months in advance and launched a pasta kit pop-up in Chicago that helped beta-test aspects of the iggy's concept and menu.
About Matthew Poli
Before helming Claymore and iggy's beverage programs as managing partner, Matthew Poli spent four years as head sommelier and beverage director at Blackberry Mountain. A Chicago native, Poli began his hospitality career at the city's The Publican in 2008 and rose to assistant manager over six years there. He then moved to Boulder, Colorado, to join the James Beard Award-winning Frasca Food & Wine under Master Sommelier Bobby Stuckey. In 2016, Poli relocated to Nashville to work alongside his brother, Ryan, as beverage director of The Catbird Seat.
