CHANGES HAPPENING AT WATERMARK: RESTAURANT PLANS RELOCATION TO DOWNTOWN NASHVILLE, HIRES NEW EXECUTIVE CHEF
The Gulch’s fine dining staple will move to SoBro location in late 2017 with newly appointed executive chef Elliot Cunniff at the restaurant’s helm
(NASHVILLE, TN.) October 26, 2016 – In late 2017, Watermark, one of Nashville’s fine dining favorites, will relocate to the downtown building set to be Bridgestone's Americas headquarters. After 11 years of success in the Gulch, the restaurant will move to the central business district of downtown Nashville, adjacent to the Country Music Hall of Fame, Schermerhorn Symphony Center and more.
“We saw an opportunity to be included in one of Nashville’s most exciting projects,” says director of operations Hughes Brown. “The chance to serve our patrons from this central location is one that couldn’t be missed, and we believe it will be a seamless transition for our team and guests.”
The building, owned by Highwoods Properties, is located at 210 4th Avenue S. and will stand 30-stories-high, providing office and parking space to more than 1,700 Bridgestone America employees. Watermark will be the only retail tenant on the property, and plans to occupy almost 8,000 square feet on the bottom floor of the structure, located at the corner of Demonbruen and Almond Streets.
“Highwoods Properties is excited to have Watermark as a customer in the SoBro building being constructed for Bridgestone Americas,” said Highwoods Nashville Division Leasing Representative Casey Dawson. “We think the iconic Nashville brand of Watermark will be an excellent addition to both the building and the downtown neighborhood. It is a great fit for a project of this magnitude and we are happy to be a part of it,” said Dawson.
In 2005, Brown opened Watermark with his father, Jerry, to a market where they saw a need for great dining options. One of the first restaurants to open in the Gulch, it became an instant success and helped pave the way for much of Nashville’s dining scene today.
“After 11 years in business, we are embracing change and growth to be able to give our customers the best possible experience,” says Brown.
Part of this growth includes the addition of executive chef Elliot Cunniff, who most recently served as chef de cuisine at SoHo Grand Hotel in New York City. Chef Cunniff boasts an impressive résumé and has held executive sous chef positions at David Burke Fabrick, Daniel, DB Bistro and more in NYC before making his way to Nashville. He has already brought a number of changes to Watermark’s menu and is looking forward to the direction the restaurant is headed.
“My goal is to elevate the already fresh, delicious and local cuisine that Watermark has become known for. We have been working hard with farmers and vendors to source the highest quality ingredients from around the world and our own backyard,” says Cunniff. “My cooking is influenced by our team’s varied experiences in some of the best restaurants in the country, and everyone is very excited to take the menu in a creative new direction to provide an amazing dining experience for our customers.”
Chef Cunniff’s new menu is heavily focused on locally sourced, fresh ingredients, and is separated into bites, small plates, large plates and sides. Dishes like the salmon crudo (jalapeño, cilantro, hibiscus water), bacon & pickles (Benton’s bacon, pickled vegetables), New Bedford scallops (hearts of palm, couscous, pistachio), espresso duck (eggplant, foie gras, black truffle, cherry) and charred carrot (thyme, chive oil) showcase chef Cunniff’s range of expertise and affinity for crafting creative and beautiful dishes.
